Chief O'Brien's Potato Soup
Serves 4
The age-old Irish favourite.

Ingredients:

4 Cups of potatoes peeled and cut into small cubes

5 Cups chicken stock or broth
(Vegetable stock may be substituted)

2 Cups of milk (whole milk or half and half)

1 small onion - chopped

1 Cup of ham - chopped (optional)

1 Cup of Swiss Cheese - grated

½ Teaspoon Salt

¼ Teaspoon Black Pepper

Preparation:
- Sautee onions in a little butter until translucent in soup
pot.
- Add chicken broth, ham and potatoes and simmer 10 minutes.
- Add milk and cheese and simmer 15 more minutes, stirring
often to incorporate cheese.
- Add salt and pepper.
- Stays well on low heat for quite a while if stirred often &
not allowed to burn. Best served after an hour or so.
