Chief O'Brien's Potato Soup

Serves 4

The age-old Irish favourite.
 

Ingredients:

  • 4 Cups of potatoes peeled and cut into small cubes

  • 5 Cups chicken stock or broth
    (Vegetable stock may be substituted)

  • 2 Cups of milk (whole milk or half and half)

  • 1 small onion - chopped

  • 1 Cup of ham - chopped (optional)

  • 1 Cup of Swiss Cheese - grated

  • ½ Teaspoon Salt

  • ¼ Teaspoon Black Pepper

 
Preparation:
  1. Sautee onions in a little butter until translucent in soup pot.
  2. Add chicken broth, ham and potatoes and simmer 10 minutes.
  3. Add milk and cheese and simmer 15 more minutes, stirring often to incorporate cheese.
  4. Add salt and pepper.
  5. Stays well on low heat for quite a while if stirred often & not allowed to burn. Best served after an hour or so.
