Scott's Citrusy Salsa

Serves 2

A simple salsa to enjoy with nachos, vegetable sticks or fajitas.
 

Ingredients:

  • 2 large firm tomatoes

  • ½ medium red onion, peeled and quartered

  • 1tbsp fresh coriander leaves

  • Zest and juice of ½ lime

 
Preparation:
  1. Pour boiling water over the tomatoes. After 1 minute drain and slip the skins off.
  2. Cut the tomatoes in half and squeeze out the seeds.
  3. Add the tomato flesh to a mini-chopper along with the rest of the ingredients and pulse-chop (but not too finely).
